Overnight Pancakes

Ingredients

  • 4 C plain flour (all purpose)

  • 1 tbs yeast

  • 1 tbs baking powder

  • 1 tbs caster sugar

  • 2 tsp baking soda

  • 1 tsp salt

  • 4 large eggs (lightly beaten)

  • 4 C buttermilk

  • 1/4 C neutral flavoured oil (vegetable, canola, rice bran, ect)

Preparation

Step 1


In a large bowl or container with extra room for the batter expansion, whisk together the flour, yeast, baking powder, sugar, baking soda and salt.



Step 2


Add the eggs, buttermilk and oil. Mix until evenly combined (don't overmix, just mix until no dry streaks remain).



Step 3


Cover the bowl and refrigerate for at least 8 hours (or up to 24 hours).



Step 4


When ready to make the pancakes, uncover the bowl and give the batter a quick stir (do not overmix). Cook the pancakes on a hot pan or skillet, flipping when bubbles form on the top. Serve with choice of fruit and maple syrup.
